Spicy Cauliflower Crust Protein Pizza
- 1 large cauliflower head, cut into florets
- ¼ cup grated parmesan cheese
- 2 cups grated mozzarella, divided
- 5 scoops Naked Nutrition Naked Whey grass fed whey protein powder
- 6 dashes Tapatio, plus more as needed
- 2 large eggs
- ½ teaspoon of salt
- ¼ cup of your favorite pizza sauce
- Spicy sausage or pepperoni (optional)
- Fresh basil, for garnish
Preheat the oven to 425°F. Line a baking sheet with parchment paper.
Cut your cauliflower into florets and add them to a food processor. Pulse the cauliflower until it is crumbly and resembles grains of rice. You will need about 2½-3 cups of riced cauliflower in total. Microwave the cauliflower rice for 5 minutes, or until tender. Alternatively, you can steam the cauliflower.
Once the cauliflower is cooked, place it in a clean kitchen towel or stacked paper towels and squeeze out any excess moisture. To a large bowl, add the cauliflower, grated parm, ½ a cup of the mozzarella (reserve the rest for topping), Naked Whey, Tapatio, eggs, and salt.
Mix everything together until combined. Transfer the mixture to the parchment lined baking sheet. Form into a 10”-12” round crust. Bake until golden and firm, about 20 minutes.
Once golden, top with pizza sauce, the remaining mozzarella cheese and meat (if using). Bake until melted and browned, another 8-10 minutes. Garnish with basil and more hot sauce if desired.
