Snickerdoodles are delicious. Unfortunately, like most cookies, they aren't exactly nutritionally sound. But, with some clever substitutes and a well-chosen vanilla whey protein powder, we can fix that!
Here's the gloriously simple recipe.
- 1 ½ cups flour
- 3 scoops Less Naked Vanilla Whey Protein Powder
- ¼ cup honey
- 1 tsp cinnamon
- 2 tbsp coconut oil, melted
- 2 tbsp milk (of choice)
- 1 egg, beaten
- Sugar and cinnamon for coating
Preheat your oven to 350 F. In a large bowl, mix the flour, vanilla whey protein powder, honey, cinnamon, coconut oil, milk and egg. Once the dough forms, scoop out 2 tbsps at a time.
Drop the ball into the sugar and cinnamon until coated and then flatten into a cookie on a baking sheet. Bake for about 8 minutes, or until golden.
