Healthy Gluten Free Protein Powder Muffins for Kids (and Adults!)

Kids crave sugar, that's just science. As a health-conscious parent, though, you're deeply interested in keeping your kids healthy and teaching them how to eat right.

 

To support your noble efforts, we humbly present the following recipe for gluten-free protein powder muffins. Each muffin packs about 7g of protein, 20g of health carbs and just 2g of fat.

 

This particular recipe is for blueberry muffins but you can easily tweak things to incorporate whatever flavor you'd like to feature.

  • 1 1/4 cup oatmeal flour
  • 3 egg whites
  • 1/2 cup Greek Yogurt
  • 1 cup unsweetened applesauce
  • 2 tablespoon honey
  • 1 teaspoon vanilla extract
  • 1 medium banana, peeled and mashed
  • 3 scoops Gluten Free Protein Powder
  • 1 teaspoon cinnamon
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon lemon zest
  • 1 cup blueberries, fresh or frozen

    Preheat your oven to 350 F and prepare a muffin tin. In a large bowl, combine the wet ingredients, including the banana. Mix the dry ingredients, except for the blueberries, in a separate bowl.

     

    Combine the wet and dry mixtures and stir until smooth. Fill each muffin cup about ¾ of the way and top with blueberries. Bake for 20 minutes.
